When Daniela and Álvaro traded their home in the Chilean Andes for the Rocky Mountains, they dreamed of sharing “la sobrasura” of the street food they loved with its vibrant flavors and traditions with their new community.

P.S. Modern Syrups
European Inspired. Rocky Mountain Made.
Chef Patric Stettler crafted his first batch of elderflower syrup to offer guests in his Swiss restaurant a natural, non-alcoholic alternative to sugary pop and cocktails. After returning to his home in Canmore, his creations became so popular with friends and especially his then-pregnant wife Soulafa that he decided to try his luck at the Farmer’s Market.
Today, fans of P.S. Modern Syrups can choose from six flavors to enhance their favourite hot, cold, carbonated, still or alcoholic beverages.
Bow Valley Dumplings
Dumplings, known as “jiaozi” in Chinese, are a quintessential part of Chinese cuisine and celebrations. In many households, several generations gather and trade stories during the process of hand-crafting an assortment of fried and steamed dumplings with various fillings, often following family recipes and honoring the symbolic meaning of the ingredients.

Even after 30 years in Canada, Alonso’s love for his Peruvian roots still shines through in his creative culinary creations. He regularly reinvents this staple of South American cuisine to introduce new flavors and ingredients to his devoted following. One element, however, never changes – the buttery, flakey dough that cradles and perfectly elevates both savoury and sweet aromas.
Da Luigi Gourmet
Since December 2020, Luigi and Coni have set out to surprise and delight our palates with their unique jams, spreads, and chili oils. Drawing on Luigi’s Italo-Chilean roots and Coni’s artistic creativity, the team finds fun new ways to combine fresh ingredients for their small-batch, hand-made creations. Today, their selection spans over a dozen sweet, savoury, and spicy products.

Val and Anthony’s deeply rooted passion for wine, food, and travel shines through in everything they do. Their selection of homemade pickled vegetables and spreads perfectly captures the essence of Epicureans’ guided Culinary Adventure tours through France, Spain, Italy, and Greece. Whether you are reliving your own memories or want to get a taste for a new experience, these delights are a small piece of Europe in your own home.
Bow Valley Microgreens
Profoundly moved by The Market Gardener by Jean-Martin Fortier, Delphine has devoted the last 10 years to small-scale, organic agriculture. To complement her seasonal selection of in-ground vegetables, she recently ventured into urban farming by adding microgreens to her offerings. Grown in purposefully designed incubators right here at The Co+Kitchen, they are quickly becoming a year-round favourite with high-end restaurants in the Bow Valley looking for a finishing touch that is both nutritious and aesthetic.
Pioneer Butchery & Charcuterie Ltd.
Tradition is the cornerstone of Pioneer Butchery & Charcuterie. Driven by the core belief that meat shouldn’t be any different from the good ol’ days, meaning naturally raised and locally sourced, the team uses time-tested methods to bring new flavours to life. Ranging from Albertan grass-fed beef to bison and wild boar, their selection of fresh and cured meats promises to satisfy every carnivorous craving.
Mount Bison & Cattle Company
Katie and Tyler’s love and appreciation for their 250-acre homestead and every being on it runs deep and pure. The rolling hills and forests of Caroline, AB provide their bison with everything they need to live healthy and happy lives, free from hormones, steroids or antibiotics. In return, the first generation ranchers promise to not waste any part of the majestic animals: beside the traditional fresh cuts, patties and sausages, Mount Bison & Cattle Company offers freeze-dried pet treats, bone broth and even handspun yarn from naturally-shed fibres and personal care products made of tallow.
